A delightful and quick dessert using only 3-Ingredients. The cookies are lite and crispy and incredibly good, you will want seconds. This recipe makes a big batch, great for entertaining or take them to your next potluck get together.
Gluten free, 3 ingredient almond cookies.
- 2 eggs
- 1/2 cup sugar
- 2 1/2 cups sliced almonds
- Dash of Vanilla extract (optional)
Preheat oven to 350 F. Line a baking sheet with parchment paper.
Whisk eggs by hand. Than add sugar and vanilla (if using) and mix. Lastly add in the almonds and mix well.
Place about a spoonful of almond mixture on a baking sheet, about 1" apart. *(The cookies will spread out when baking, so make sure you leave some space between.)
Bake them until edges are golden brown, about 20 minutes. Let them cool completely before serving. Enjoy!
