Delicious Arugula salad with creamy avocado and sweet and tart cranberries. Topped with pine nuts and or slivered almonds and dressed with sweet honey dijon dressing.
- 1 pre-packaged and pre-washed fresh arugula
- 1 avocado
- 1-2 tablespoons pine nuts or slivered almonds
- 2 tablespoons dried cranberries
- 4 tablespoons white or red whine vinegar
- 2 teaspoons dijon mustard
- 2-3 tablespoons honey *depends how sweet you want you can use more or less
- 1/4 cup olive oil
- fresh cracked black pepper
In a large bowl, add the pre-washed arugula. Add cranberries.
Prepare the dressing. Take a small container or bottle and add all the ingredients for the dressing. Close the lid tight and give it a nice shake, until all the ingredients mixed well and the oil and vinegar has emulsified.
Pour the dressing over the salad. Give it a slight toss and than sprinkle on the nuts.
Slice the avocado and arrange around the salad like a flower or set them on the top. Enjoy!
This salad uses the entire package of arugula. If you want to use half of the package, simply cut the measurements in half for the dressing.
