This famous Italian starter dish called Bruschetta is made of toasted French baguette or Italian bread and topped with creamy avocado, and a mix of tomato, basil, garlic and olive oil. Such a simple and healthy appetizer, and yet so tasty. This is a great starter dish for a huge crowd. You can double up on the recipe and prepare a big batch for your next party.
Toasted Bruschetta topped with creamy avocado and a tasty mixture of tomato, basil, garlic and olive oil.
- 1/2 French baguette or Italian bread
- 1/4 cup olive oil for brushing
- 1 ripe avocado, mashed
- 2 ripe regular or plum tomatoes, seeded
- 4-6 fresh basil leaves, chopped
- 1 clove garlic, minced
- 1 tablespoon olive oil
- Salt and pepper
Preheat oven to 450°F. *(These can also be done in a toaster oven.)
Slice the tomatoes in half and remove the seeds. This method helps remove most of the moisture from the tomatoes.
Chop the tomatoes into small cubes and place in a bowl. Add the chopped basil, minced garlic, olive oil, salt and pepper. Mix and let the mixture marinate.
Prepare the bread slices: Use a bread knife or serrated knife, the one with the teeth. Slice the baguette on the diagonal making 1/2-inch thick slices. Brush each slice on both sides with olive using a pastry brush. Place on a baking sheet lined with parchment paper.
Bake on top rack for about 5-8 minutes until golden around the edges.
Make an avocado mash: In a small bowl, place sliced avocados and about 1/4 teaspoon salt and mash the avocados using a fork. It doesn't need to be to creamy just enough so it can spread. The small pieces of avocado chunks is ok. Set aside.
Take each baquette and spread about 1 tablespoon of the avocado mash and set on a serving platter. Continue until all baguettes are spread.
Next, spoon about 1 tablespoon of the tomato mixture over the top of each baguette.
Garnish with some more basil leaves over the top and serve.
