A fun way to enjoy this wholesome and delicious sweet potato and easy to prepare too. Sweet potato accordions are simply drizzled with olive oil, seasoned with a dash of salt and pepper and baked. Eating the skin of the potato has also many health benefits and its super tasty.
The trick to turning them to accordions is simple. All you need is a cutting board, a wooden spatula, and a sharp chefs knife.
Step 1: Place the sweet potato on the cutting board. Take the spatula and lay it down horizontal to the potato on the cutting board. Slice about 1/4 inch thick slices. When you slice, the knife should hit the handle of the spatula. This method prevents you from slicing the potato wedges all the way through and creates the accordion. Be very careful when slicing.
Step 2: Prepare a baking sheet lined with aluminum foil or parchment. Place the potatoes and drizzle them with olive and season with salt and pepper. Bake them at 400 F for about 45 minutes. Serve immediately. Simple Right?!
