These Baked Zucchini Chips are healthy, delicious and very easy to make. They can be served as an appetizer or enjoyed as a snack. Their crunch comes from the panko breadcrumb coating and the best part about this zucchini recipe is that these chips are baked, not fried. Serve these with fry sauce and enjoy!
- 2 small zucchini cut into1/4 inch slices *not too thin
- 1 cup panko bread crumbs
- 1 whole egg or 2 egg whites
- 2 tbsp water
- garlic powder
- cooking oil spray
- 2 tbsp mayo
- 2 tbsp ketchup
Preheat oven to 400 degrees F.
Line a baking pan with parchment paper. Lightly coat with cooking spray.
Add the flower to a zipper or zip-lock bag. Add the breadcrumbs into a large shallow dish. In another bowl whisk the egg and water.
Add the zucchini slices into the flour, close the bag and give it a nice shake until all the zucchini is coated in the flour. Shake of the access flour and then dip coat them in the egg mixture. Lastly, coat them in the bread crumbs. Place in a single layer on baking sheet. Repeat until all zucchini slices are coated. Spray chips with cooking oil spray. Sprinkle the salt and garlic powder on top, make sure to get both sides.
Bake for about 20 minutes, flipping half way or until golden and crispy. Serve with fry sauce (recipe follows) or any of your favorite dipping sauce.
For the dipping sauce, mix the mayo and ketchup. If you like some heat, add sriracha hot sauce. Mix well, until smooth and creamy.
