- 1 cup fresh or frozen blueberries
- 2 eggs separated
- 1 cup milk
- 1 cup water
- 1 tsp vanilla extract (optional)
- 2 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/3 cup oil (canola)
Preheat your Waffle Maker.
Put all ingredients, except egg whites, into a large bowl. Mix until smooth.
In a separate bowl, beat the egg whites until soft peaks form. By hand, using a rubber spatula, gently fold in the beaten egg whites.
Gently fold in fresh blueberries into the batter.
Pour approximately 3/4 cup of batter over the waffle grids. Close the waffle maker, bake for about 3-5 minutes, until golden.
Once you have reached the desired consistency of your waffles, you are ready to plate. Serve with any of your favorite toppings or just a light dusting of powdered sugar and enjoy!
