Super moist and chocolatey banana cupcakes.
- 1/2 cup chocolate chips
- 1 medium ribe banana
- 1 large egg
- 3/4 cup warm water or milk *(substitute milk with rice milk or soy milk)
- 1/4 cup vegetable or canola oil
- 3/4 teaspoon vanilla extract
- 1 cup all purpose flour
- 1/4 cup unsweatened cocoa powder
- 1/2 cup granulated sugar
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
Combine all dry ingredients in a large bowl and mix well with a wisk.
In a seperate bowl, mash the banana. Add all the wet ingredients and mix very well until smooth. You can use a stand mixer or hand held mixer.
Slowly and gradually mix in the dry ingredients. Mix well until creamy and smooth. Lastely, add the chocolate chips and mix well.
Line the muffin pan with paper baking cups or holders. Fill the moulds with cupcake batter 1/2 way up.
Bake at 350 F. for about 20-25 minutes until a toothpick inserted comes out clean.
