So summer is here…and so is the cravings for the sweet frozen treats! This season I got the bright idea of making my own Popsicle’s! After trying 5 different Popsicle molds I have settled on Silicomart mini rectangle pop molds, bought on Amazon. I highly recommend this mold for its convenience and size. The silicone molds come equipped with a convenient clear tray, as well as 50 Popsicle sticks to start. At first glance, the portion size looks awfully small. But on second thought its perfect…you can have more than one, or as many as your heart desires. I now stock a wide variety of pops in the freezer so my hubby can sample few flavors a night. It’s also the perfect size for my toddlers. There are 2 cons: the first is the price. Now I realize that the price is a bit high for the product, but so far it has paid for itself twofold. I stopped buying pops, and I have full control of the ingredients that go into them.

Con #2: although the molds come with a tray, there is no cover. I feel like a cover is necessary. Some of the other silicone molds came equipped with a silicone sheet to cover the molds while you freeze. This prevents freezer burn as well as freezer odors getting into the pops. No worries, there is an easy fix. Just apply plastic wrap atop of your filled molds, run your finger along the sides to seal and freeze!

Dairy free chocolate covered coconut Popsicle's that make a great and healthy kid-friendly treat.
- 1 can full fat coconut milk
- 2 tablespoons arrowroot powder
- 3-4 tablespoons xylitol or sweetener of your choice
- 1 vanilla bean, seeds scraped out
- 2/3 cup dark chocolate
- 1/3 cup coconut oil
In a small bowl, whisk together ½ cup of the coconut milk, seeds of 1 vanilla bean and the arrowroot powder.
In a small saucepan over medium heat, combine all remaining ingredients until it starts to bubble, then stir in the arrowroot/coconut mixture and whisk very well for about a minute or until thickened.
*Note: You’ll feel it in your arms, but you should also be able to see the whisk leaving a trail in the mixture.
Remove from the heat and let the mixture cool. Whisk again vigorously (the mixture may have gotten a little thick, so whisk very well!)
Fill your Popsicle molds and freeze until solid, at least 3 hours.
Combine dark chocolate and coconut oil in a small saucepan over medium heat, stirring constantly, until smooth. Let cool slightly before using.
Prepare a sheet pan lined with parchment paper at the end of your assembly line.
Remove the frozen Popsicle's from their molds.
Place the chocolate coating into a bowl.
Dip a Popsicle quickly into the chocolate coating. Make sure the whole Popsicle is coated in chocolate! Then wait about 15-30 seconds for the chocolate to set and place the Popsicle onto the prepared sheet pan.
When you’re done coating all the Popsicle's, eat immediately or place into an airtight container in the freezer for up to 6 weeks. Enjoy!
