Crispy, southern style fried chicken is juicy, tender and delicious.
- 1 whole chicken *you can also use pre-cut chicken legs and chicken wings
- 1 large egg
- 1/4 cup water
- 1 cup flour *you can also use self-rising flour
- 1 tsp baking powder *if using self-rising flour, do not add baking powder
- 1 tsp paprika
- 1/4 tsp pepper
- 1 tsp salt
Cut the chicken into pieces and set aside
In a shallow dish wisk one egg and water. Set aside.
In another shallow dish, combine dry ingredients and seasonings. Set aside.
Coat the chicken pieces in flour first. Than dip in the egg mixture. Coat the chicken again in the flour mixture.
Heat the oil on high. Fry in 1/2 inch deep 10 or 12-inch cast iron skillet or electric fryer pan until golden brown on one side. Turn, reduce heat to medium and slightly cover with a lid and continue cooking 15 minutes or until chicken is golden brown and done. Remove cover, continue cooking about 2 minutes.
Drain on absorbent paper towels.
To reheat and maintain it's crispiness, place the cooked chicken on a wire rack on top of a baking sheet and bake at 350 F. for about 10 minutes. Serve immediately.
