Easy fettuccine alfredo with creamy parmesan sauce
- 1/2 package fettuccine pasta
- 4 tablespoons butter
- 1/2 cup parmesan cheese, grated
- 1/2 cup cream or half and half
- Salt and pepper to taste
- few sprigs Italian parsley or basil (optional)
Bring a large pot water to a boil and add in salt. Place the fettuccine pasta and cook for about 8-10 minutes.
While the pasta is cooking prepare the sauce. In a small saucepan, melt the butter and add the cream. Stir often to combine well, and turn down the heat to the lowest. Stir in the parmesan cheese until it melts. The sauce should thicken up a bit. Remove from heat.
When the pasta has cooked, do not drain the pasta water. Remove the pasta with tongs and transfer to a large bowl.
Pour the sauce over. Stir well to combine. You can add more pasta water to thin out the sauce. At this time you can add the parsley and basil and season with salt and pepper. Add extra grated parmesan cheese over the top and serve immediately.
