Flaky and moist oven broiled Bronzino with lemon and dill.
- Bronzino fish
- 2 lemons
- fresh dill
- olive oil
- Salt and pepper
Prepare a baking sheet lined with aluminum foil.
Wash the fish well and use a paper towel to pat dry.
Take a knife on an angle and make small slits in the fish skin on both sides. Make the slits large enough to fill in with lemon wedges.
Slice one lemon in half lengthwise and slice into thin wedges or semi circles.
Place the fish on the baking sheet. Drizzle the fish with some olive oil and rub all around and inside the cavity. Sprinkle with salt and pepper all around and inside.
Add some lemon wedges inside the cavity of the fish, as many as you can fit. Take some roughly chopped dill and place inside the fish as well.
Place the rest of the lemon wedges in the slits of the fish on both sides.
Set the baking sheet in the middle rack of the oven and set to broil. Once you see the skin getting charred half way through cooking, flip the fish to the other side and continue cooking until the skin of the fish gets slightly charred as well. Remove and serve immediately with sliced lemon wedges on the side.
You can also substitute dill with fennel, which also comes out very tasty.
