This is a very simple, versatile and delicious cobbler recipe that you can apply to any variation of fruit that’s in season. You can also use any combination of berries frozen or fresh. This recipe has a combination of sweet peaches and red plums. The cobbler batter forms a sugary and crispy topping that is very delicious. Best served warm with a scoop of vanilla ice cream or whip cream. Also, can be enjoyed cooled as is.

Dairy-free peach and plum cobbler with crispy sugary topping.
- 3-4 medium peaches or donut peaches
- 3-4 red plums
- 3 tablespoons Nutiva vegan shortening
- 1 cup sugar, divided
- 1 cup flour
- 1 teaspoon baking powder
- 1⁄4 teaspoon salt
- 1⁄2 cup coconut milk
- 2 tablespoons cornstarch, divided
- 1 cup boiling water
Spread the sliced peaches and plums in a greased 8 inch square baking pan. Add 1 tablespoon of cornstarch and mix well to coat the peaches and plums.
In a bowl, mix Nutiva vegan shortening and 3/4 cup sugar well.
In a separate bowl, sift flour, baking powder, and salt together.
Add dry ingredients alternately with coconut milk to shortening and sugar mixture. Batter will be thick.
Spread batter evenly over berries.
In a small dish, combine remaining 1/4 cup sugar and 1 tablespoon of cornstarch together then sprinkle evenly over batter.
Pour 1 cup boiling water over all. Do not mix.
Bake at 350 F for 30-45 minutes, until golden brown and toothpick inserted into middle comes out clean. Serve warm or at room temperature with whipped cream or ice cream if desired. (Doubled recipe fits into a 9x13 pan, but must bake 20-30 minutes longer than normal).
