Strips of steaks marinated in teriyaki sauce, threaded onto skewers and broiled in the oven.
- 1 pound flank steak or skirt steak
- 8-12 wooden skewers soaked in water
- 1/4 cup oil
- 1/4 cup low sodium soy sauce *(if using regular soy sauce, dilute with equal parts water to soy sauce, 1/8 cup soy to 1/8 cup water)
- 2-3 tablespoons brown sugar or honey
- 2 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 teaspoon black pepper
Soak the skewers in water for about 10-15 miunutes. Place them in a shallow dish long enough to fit the skewers and cover them in water.
Meanwhile prepare the marinade: Add all ingredients into a bottle or small bowl and stir well to combine. Set aside.
Slice the steak across the grain (the grain that goes up and down). Angle the knife and slice about 1/4 inch thick and about 1 inch wide.
Lay out the steaks in a shallow casserole dish or glass baking dish and pour the marinade over. Toss the strips of steak to coat. Cover the dish with plastic wrap and let marinade for about 15-30 minutes in the refrigerator.
Prepare a baking dish lined with heavy duty aluminum foil. Thread the marinated strips of steak onto the skewers. Line them up on the baking dish side by side.
Set the oven to broil and place the baking dish on the middle rack. Broil for about 5 minutes per side, until cooked through.
The ends of the skewers might burn slightly, this is ok.
Serve with chopped scallions and lime wedges.
