Try this meatloaf alternative that has fewer calories and is also gluten-free. Traditional meat loaf recipes call for some sort of a crumb, milk, and ketchup. Flax meal binds, and almond flour and zucchini allow for a softer, melt in your mouth loaf. Using tomato paste instead of ketchup reduces the amount of sugar.
- 1 lbs ground turkey
- 1/4 cup almond flour
- 2 tablespoons flax powder
- 2 large eggs, beaten
- 2 tablespoons onion powder
- 2 teaspoons granulated garlic
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon Italian seasoning (optional)
- 2 cups shredded zucchini, water squeezed out
- 1/2 6 oz. can of tomato paste
Preheat oven to 350 degrees.
In a large bowl, add all the ingredients and mix well.
Place into a bread loaf pan. (I prefer Pyrex, glass or ceramic, for a no mess option I recommend Paper Loaf Pans from Thrive Market.
Cook for 1 hour 15 minutes or until the internal temperature reaches 160 degrees.
Let sit for 5 minutes, cut into 8 slices, and serve or store in the refrigerator or freezer.
