- Prepackeged turkey roast in a net
- 2 bay leaves crushed, or grounded
- 1 teaspoon crushed or ground coriander
- 1 teaspoon garlic powder
- 1 teaspoon tsp sweet paprika
- 1/2 teaspoon hot paprika (you can add more or less depending on how spicy you like it) * this is also optional
- Salt & Pepper
- Olive oil for frying and basting the turkey breast
Preheat your oven to 350 F.
Prepare your seasoning mixture: In a small bowl, mix bay leaves, coriander, garlic powder and paprika.
Rub the roast with olive oil, than add your seasonings. First sprinkle all around with salt and pepper. Than generously sprinkle the entire roast with the rub seasoning mix. Make sure to cover all around, leaving no bold spots.
Add the seasoned turkey roast into a shallow baking dish. Bake uncovered for about 1 hour. You will see the the turkey roast will form a golden brown crust. You can slightly cover it with aluminum foil so the roast doesn't burn and continue roasting it for about another 15-20 minutes more.
To check if the turkey is done, insert a knife in the thickest part of the meat and make sure the juices are running clear and not pink.
When its done, put it on a cutting board and cover with foil for about 10 minutes before serving. This way the juices will flow in and make the roast extra moist.
